definitely water - especially if you're at elevation. I just spent two weeks in Mexico City (about 7,000 feet or so) for school and the first day, because of the elevation, I was so dry and parched... also make sure you give your guests some 'rest time' - again -being at elevation us lowlanders can't breathe way up there...

some light snacks, again - just having traveled and time zone changes and all that make your dining schedule a little bit off.

a note thanking them for coming,

some little souvenir of the area... even if it's a silly key-chain or something touristy...
References :
I'm doing the same thing! A while back, I saw an atricle in a wedding magazine about what to put in them, tore it out, and it in my wedding planning scrapbook. So I went to grab it for you! :) This is what they suggest:

Welcome/thank you card or note
Weekend itinerary
Bottled water or bottle of wine
Menus from local restuarants
Map of the area
Phone numbers of host and bridal party
Flip flips, rain poncho or sunscreen depending on locale
Local snack (not sure what CO would be - but like See's candy for LA, saltwater taffy for New Jersey, etc)

EDIT: Also do one or two postcards from your city!

I found this link incredibly helpful!

http://sites.google.com/site/tracyandbob409/Home/oot-boxes

Good luck! : )
References :
BTB 10 10 09
